Shan Special Badam Kheer Mix is a traditional dessert mix for milk, almond and rice pudding from Shan Foods of Karachi. The box holds broken rice, cane sugar, almonds, green cardamom and saffron, with a touch of kewra-style screw pine flavour, so you only need to add milk. The result is a thick, fragrant badam kheer that serves five to six people.
How to use it
Add one packet to one litre of milk in a heavy pan and cook for fifteen to twenty minutes, stirring often so the rice does not stick. When the mixture thickens, take it off the heat, let it cool and serve cold. For a richer kheer khas, first simmer two litres of milk on a low heat for two to three hours until it reduces by half, then add the mix and cook for fifteen to twenty minutes. Top with slivered almonds and a few saffron threads for Eid, Diwali or a family dinner.
