Shama Golden Sella is super kernel basmati from Pakistan, parboiled in the husk and aged for the best cooking results. Parboiling gives the grain its golden colour and firms it up, so it cooks into long, separate grains that hold their shape in a biryani pot and stay fluffy when reheated.
How to use it
Wash the rice gently in cold water, then soak it for about two hours. Drain, add to boiling water, using about one and a half cups of water to each cup of rice, and cook until the water has evaporated and the surface looks dry. Cover and leave on a very low heat for a further ten minutes. For biryani, par boil the soaked rice for about eight minutes before layering and cooking on dum.
