The 2kg bag of Shama Golden Sella, the aged super kernel parboiled basmati that South Asian cooks choose for biryani, pulao and big family pots. The grains are parboiled before milling, which gives them a golden tint and makes them very forgiving: they stay long and separate even when cooked in large batches or reheated the next day.
How to use it
Rinse the rice gently and soak for up to two hours. For plain rice, cook in about one and a half cups of boiling water per cup of rice until absorbed, then cover and steam on the lowest heat for ten minutes. For biryani, boil the soaked rice in salted water with whole spices until nearly done, drain and layer over the cooked masala, then seal and cook on dum.
