Steamed atta is wholewheat flour that has been steamed and dried before packing. The steaming sets the starch, so the flour forms loose, fluffy crumbs when you rub in water, exactly what Sri Lankan and Tamil pittu and wheat string hoppers need. Samayal pack it in a 1kg bag for everyday use.
How to use it
For pittu, sprinkle warm salted water over the flour and rub it through your fingers until it forms damp crumbs that hold when squeezed, add grated coconut and steam for about ten minutes. For string hoppers, mix with boiling water to a soft dough, press through an idiyappam mould and steam. It also makes soft roti and godamba dough, and blends well with roasted rice flour.
