A 5kg handled bag of Samayal Steamed Wheat Flour, for kitchens where pittu, string hoppers and roti are made several times a week. Steamed before packing, the flour absorbs hot water evenly and steams up light and soft, without the raw taste of ordinary plain flour.
How to use it
Work warm salted water into the flour with your fingertips until it forms damp crumbs, layer with grated coconut in a pittu kuzhal and steam. For string hoppers, scald the flour with boiling water, knead briefly and press through an idiyappam mould onto trays to steam. Many cooks mix it half and half with roasted red rice flour for softer, more colourful pittu. The same flour makes good roti and kottu dough.
