Samayal Roasted Red Rice Flour comes from Sri Lanka, milled from red rice and dry roasted so it is ready for the dough straight from the bag. Red rice keeps its bran, giving the flour a soft pink-brown colour and a nuttier flavour than white rice flour, the way many Sri Lankan families prefer their string hoppers and pittu.
How to use it
Pour boiling salted water over the flour a little at a time, stirring with a wooden spoon until it comes together, then knead while warm to a smooth, soft dough. Press through an idiyappam mould onto oiled trays and steam for about eight minutes. For pittu, rub in warm water and grated coconut until the mix holds when squeezed, then steam in a pittu bamboo. It also makes rotti and kozhukattai.
