Niru Sago is sabudana, the white tapioca pearls made from 100% tapioca starch, imported from India. These are a larger pearl, which keeps its shape well and turns soft and translucent with a gentle chew when cooked. Sabudana is one of the most important foods of the Navratri fast, because it is grain-free, and it is equally loved in South Indian and Sri Lankan payasam. The 450g bag will see you through several fasting days.
How to use it
For khichdi, rinse the pearls two or three times, then soak them in just enough water to cover for six hours or overnight until a pearl crushes easily. Drain well, then fry in ghee with cumin, green chilli, curry leaves, boiled potato and crushed roasted peanuts, finishing with rock salt and lime. For payasam, simmer washed pearls in milk until clear, sweeten with sugar or jaggery and add cardamom, cashews and raisins. Sabudana vada and thalipeeth are other fasting favourites.
