Mathangi Roasted Red Rice Flour 5kg

Mathangi Roasted Red Rice Flour is made in the Vanni, the rice growing heart of northern Sri Lanka, from red raw rice and nothing else. Red rice keeps its bran, so the flour is a soft pinkish brown with a fuller, nuttier flavour than white rice flour, and string hoppers and pittu made with it have that familiar earthy colour.

How to use it

The flour is already roasted, so it is ready for the dough. Scald it with boiling salted water, mix with a spoon until cool enough to handle, then knead briefly for idiyappam pressed onto trays and steamed. For pittu, rub in warm water and freshly grated coconut until the mix holds when squeezed, then steam in a pittu kuzhal. It also makes crisp rotti and the dough for kozhukattai and modak.
