Maghaj flour is coarse ground chana dal, milled for magas, the Gujarati besan fudge made at Diwali and weddings. The grainy texture is the point: it roasts in ghee to a nutty, golden crumb that gives magas and besan ladoo their melt in the mouth bite.
How to use it
Rub a little hot ghee and milk into the flour and leave it for 15 minutes so the grains open up, then sieve it. Roast it slowly in plenty of ghee over a low heat, stirring constantly, until it smells nutty and turns light gold. Cool slightly, stir in powdered sugar, cardamom and nutmeg, then press into a tray and top with almonds and pistachios, or roll into ladoo.
