A kilo tin of butter ghee, which is the size to buy if ghee is a cooking fat in your kitchen rather than a finishing one. Butterfat at 99.8 per cent, so there is no milk solid left to catch, and it takes a much higher heat than butter before it smokes. It keeps at room temperature; a dry spoon is the only care it needs.
How to use it
Use it for the tarka on dal, for frying puri and paratha, for halwa and mysore pak, and for a spoonful melted over hot rice or khichdi. It sets firm in a cold kitchen and loosens again in the pan. Against Amul Pure Ghee 1L it is milder and less granular, which some people prefer and some do not.
