Heera Kesar Mango Pulp is sweetened pulp made from Kesar mangoes, the saffron-coloured variety from Gujarat known for its intense aroma and honeyed flavour. At 92% mango with a little sugar syrup and citric acid, the pulp is thick, smooth and bright, and it brings the taste of mango season to the kitchen all year. The 850g ring-pull tin serves a family dessert or a jug of lassi for guests.
How to use it
For mango lassi, blend one part pulp with one part plain yoghurt and half a part cold milk, then add a pinch of cardamom and ice. For aamras, chill the pulp, stir in a little ground cardamom or dry ginger and serve with hot puris. It also makes amrakhand: fold equal amounts of pulp and hung yoghurt together with sugar to taste. Use it in kulfi, mango mousse, cheesecake and smoothies, and refrigerate any leftover pulp in a glass bowl.
