KTC Alphonso Mango Pulp is sweetened pulp made from 93 per cent Alphonso mangoes, the fragrant, saffron-coloured variety from western India prized for its rich, honeyed flavour. It is smooth, thick and ready to use straight from the tin, so you can enjoy Alphonso mango long after the short fresh season has ended. Suitable for vegetarians.
How to use it
Chill the tin before opening. For mango lassi, blend one part pulp with two parts plain yoghurt, a little milk and a pinch of cardamom. Serve it as aamras alongside hot puris for a festive thali, fold it through hung curd for amrakhand, or mix with condensed milk and cream for no-churn kulfi and mango ice cream at Diwali. It also sets well in mango mousse, cheesecake and jelly. Once open, move any leftover pulp into a covered non-metallic dish in the fridge and use within two days.
