Fudco Whole Black Cardamom, known as kaali elaichi or badi elaichi, is the large, dark, ridged pod used across North Indian and Punjabi cooking. Its flavour is deep, smoky and camphor-like, quite different from green cardamom, and a single pod gives real body to a slow-cooked dish. The 50g bag holds plenty of pods for a season of rice and curry cooking.
How to use it
Lightly crush one or two pods and drop them into hot ghee or oil with bay leaf, cloves and cinnamon at the start of a biryani, pulao, rajma or chole, then remove them before serving. For home garam masala, dry roast the seeds from a few pods with cumin, coriander, peppercorns and cloves, cool and grind. Black cardamom also goes into the masala chai and kadha some families make through the cooler weeks after Dussehra.
