TRS Black Cardamom is the large, dark, wrinkled pod also sold as badi elaichi. It is dried over open fires, which gives it the deep, smoky, camphor-like aroma that sets it apart from green cardamom. TRS describe it as one of the most popular spices for rice dishes such as pilaus and biryanis, a staple in Indian, African and Middle Eastern cooking, and an essential part of garam masala. This 50g bag is packed in India.
How to use it
Lightly crack one or two pods and add them to hot ghee or oil with bay leaf, cloves and cinnamon before the rice or onions go in. For a festive biryani or a Diwali pulao, let the whole spices sizzle for thirty seconds to release their oils. For home-made garam masala, dry roast the pods with cumin, coriander, black pepper and cloves, cool, then grind. Remove whole pods before serving, and cook before eating.
