Whole pepper keeps its sharp, warm aroma far longer than ready-ground, so a small pack like this is the easy way to have fresh pepper on hand for curries, rasam, marinades and the pepper mill on the table.
How to use it
For tempering, drop six to eight peppercorns into hot ghee or oil with cumin and bay leaf before adding onions, as you would for pulao or biryani. For rasam and milagu kuzhambu, dry roast the peppercorns until fragrant and grind them with cumin and garlic. Freshly crushed pepper is also a common seasoning for vrat dishes such as sabudana khichdi and fasting potato sabzi, alongside rock salt. Fill a grinder for everyday seasoning.
