Alagappa's Payasam Mix brings together vermicelli, sago, sugar, cardamom and cashews in one packet, from Alagappa Flour Mills of Penang, Malaysia, a brand trusted since 1943. Payasam is the milky South Indian pudding served at festivals, weddings and temple offerings, and this mix gives you the classic semiya and javvarisi version without measuring each ingredient.
How to use it
Boil six cups of water and add the whole packet, stirring so the vermicelli and sago do not stick. Simmer until the sago turns clear and the vermicelli is soft. Then pour in one or two cups of milk, depending on how rich you like it, bring back to a gentle boil and serve hot. For Navratri, Dussehra or Diwali, temper extra cashews and raisins in a spoonful of ghee and stir them in just before serving. The payasam thickens as it cools, so loosen with a little warm milk.
