Baba's Payasam Mix is a ready blend of sugar, sago, vermicelli, raisins, semolina and cardamom from Baba's of Malaysia. It makes the sweet, milky South Indian payasam served at festivals, temple offerings and family meals, with the sago pearls and fine vermicelli already measured out in the right balance.
How to use it
For the full 300g pack, bring 1200ml of water to the boil, add the mix and cook over a low flame for about fifteen minutes, stirring now and then, until the sago turns clear. Pour in 500ml of milk and let it boil for two more minutes, then serve warm. For Navratri or Diwali, fry a handful of cashews and extra raisins in ghee until golden and spoon them over each bowl. If the payasam thickens on standing, stir in a little hot milk before serving.
