Al Noor Kewra Water is a fragrant distilled water from Pakistan, packed for Al Noor Food in Southall. Kewra comes from the screwpine flower, and its sweet, floral scent is what gives Mughlai biryani, shahi tukda and many mithai their unmistakable aroma. It is used a few drops at a time, so one bottle lasts through a whole festive season of cooking.
How to use it
Sprinkle a teaspoon over the final layer of a dum biryani before sealing the pot, or stir a few drops into kheer, rasmalai or phirni once it has cooled slightly. For Diwali mithai, add half a teaspoon to the sugar syrup for gulab jamun or jalebi just before you take it off the heat, so the fragrance stays fresh. It also lifts a jug of lassi or a glass of thandai. Start small, taste, and add more only if needed.
