Niru Jaggery is dark lump cane sugar, sold in a clear bag by the Tamil grocery brand Niru. The pack describes it as a pure, traditional whole sugar made by concentrating sugar cane juice without chemicals, synthetic additives or preservatives. The irregular brown pieces have a deep, caramel and molasses flavour that white sugar cannot match, and they are the backbone of many South Indian and Sri Lankan sweets. This 350g bag is a good size for a few batches.
How to use it
The pack says to cook before eating. Break the pieces with a rolling pin, melt them in a little water over a low heat and strain out any grit before use. Stir the syrup into rice and moong dal for sakkarai pongal, into vermicelli or rice for payasam, or into sesame and peanuts for chikki. For Navratri, jaggery is often used in place of refined sugar in vrat sweets such as sabudana kheer and coconut ladoo.
