Inndu is a Sri Lankan grocery label, often seen as Inndu Sri, whose range covers almost every corner of the island's cooking: rice, sour fruits, dried fish, sambols, tins and drinks. It is the kind of single brand a Sri Lankan family can fill a basket with for a week of rice and curry.
We carry Inndu across red rice, samba rice and naadu rice, goraka, Maldive fish, dried fish and tinned fish. The jars include sambols, coconut sambol and fried onion chutney, and there is coconut milk, coconut milk powder, cinnamon, pepper and rose and nannari syrup.
Red naadu and parboiled rice are boiled for everyday rice and curry, and keeri samba is saved for buriyani and festive meals. Goraka, the dried sour fruit used in southern fish curries, is soaked and ground into fish ambul thiyal, and Maldive fish flakes give seeni sambol, pol sambol and mallung their savoury depth. Fried sprats go with rice and dhal, tempered tuna fills sandwiches and patties, and fried onion chutney is spooned beside string hoppers and pittu. Rose syrup makes faluda, and nannari a cooling sarbath.
