Wijaya Sago is a 100g pack of small white sago pearls from Sri Lanka, labelled 100% pure sago. Known as sabudana in India and sawwarisi in Tamil, sago cooks to soft, translucent pearls and is one of the most important foods for Navratri fasting, when grains are set aside.
How to use it
For sago payasam, rinse the pearls, then simmer in water until they turn clear, add milk and sugar or jaggery and cook until creamy, finishing with cardamom, cashews and sultanas fried in ghee. In Sri Lanka the same pearls are often cooked with coconut milk and jaggery. For a Navratri vrat khichdi, soak the pearls until soft, drain well and toss in ghee with cumin, green chilli, potatoes, crushed peanuts and sendha namak. Small pearls cook quickly, so stir often.
