Inndu Sri Black Pepper Coarse is Sri Lankan black pepper cracked into rough, gritty pieces, packed by Universal Suppliers in a resealable pouch with a clear window so you can see the grind. Coarse pepper keeps more of its bite than fine powder and is the cut most South Indian and Sri Lankan cooks reach for when pepper is the main heat in a dish.
How to use it
Stir a teaspoon into rasam or milagu kuzhambu once the tamarind water has come to the boil, or toast it briefly in ghee with cumin and curry leaves for pepper chicken, pepper fry or a quick tadka over dal. During Navratri many families use black pepper in place of chilli, so a pinch lifts sabudana khichdi, potato sabzi and kuttu pakoras. It is also good scattered over omelettes, roast vegetables and buttered corn.
