Heera Black Cumin, sold as kala jeera or shahi jeera, is a slender, dark seed with a sweeter, more delicate and slightly smoky flavour than everyday cumin. It is the seed of choice in Mughlai and Kashmiri kitchens, where its perfume lifts rich rice and meat dishes without overpowering them. The 50g bag is packed in the UK and lasts well, as a little goes a long way.
How to use it
Add half a teaspoon to hot ghee with bay leaf, cloves, green cardamom and cinnamon at the start of a biryani or pulao, then add the rice. Kala jeera is also lovely in korma, yakhni and dum aloo, and a pinch in the tempering for raita or paneer dishes adds a warm, aromatic note. Toast lightly and grind into a homemade shahi garam masala for Diwali feasts.
