Udhaya Krishna has been making ghee in Pollachi, in the Coimbatore dairy belt of Tamil Nadu, since 1990. It is prepared from fresh butter, carries India’s Agmark quality grade, and has the rich, nutty aroma South Indian cooks expect from good ghee. The one litre jar holds 910g.
How to use it
A spoonful melted over hot rice with paruppu is the most South Indian thing you can do with it. Use it for the tarka on sambar and rasam, to roast rava for kesari and upma, in ven pongal with pepper and cumin, and for Diwali sweets like mysore pak and ladoo. The maker’s note says that as the ghee is already prepared at a high temperature, you need not heat it again: if it sets in a cold kitchen, stand the jar in warm water.
