Jay Sago Seeds Medium are small pearls of pure tapioca starch from Thailand, the sabudana that turns soft and translucent when soaked and cooked. The medium size holds its shape well, which makes it a good all-round pearl for both savoury vrat dishes and sweet puddings. The pack holds 450g.
How to use it
For Navratri sabudana khichdi, rinse a cup of pearls until the water runs clear, then soak in just enough water to cover for four to six hours. Each pearl should press flat between your fingers. Fry cumin and green chilli in ghee, add diced boiled potato, the drained sago, crushed roasted peanuts and rock salt, and stir over a low heat until the pearls turn glassy. For sabudana kheer, simmer soaked pearls in milk with sugar and cardamom until thick. Always cook before eating.
