Thurkas Sago Seeds are small white sago pearls, known as javvarisi in Tamil and sabudana in Hindi, packed in Jaffna, Sri Lanka, by Thurkas Exports and imported by Thurkas Ltd of New Malden. The pearls are small and even, so they cook quickly and turn soft and translucent with a gentle chew. The clear 400g bag lets you see the pearls before you buy.
How to use it
For javvarisi payasam, rinse the pearls, simmer in water until clear, then add milk, sugar or jaggery and cardamom and finish with ghee-fried cashews and raisins. For Navratri vrat, rinse and soak the pearls for about four hours until they press flat between your fingers, then drain well and toss in ghee with cumin, green chilli, crushed roasted peanuts, boiled potato and sendha namak for sabudana khichdi. Soaked pearls also make crisp sabudana vada and light kheer. Store in an airtight jar once opened.
