      East End Sago Seeds are small white tapioca pearls, sold in Indian kitchens as sabu dana or sabudana. They are packed in the UK by East End and marked suitable for vegans. Sabudana is one of the grains most families keep for fasting days, because it is made from tapioca and not from wheat or rice, and this 1.5kg bag lasts through all nine nights of Navratri.

      How to use it

      Rinse the pearls two or three times until the water runs clearer, then soak in just enough water to cover for four to six hours, until a pearl presses flat between your fingers. Drain well and toss with coarsely crushed roasted peanuts, rock salt and a pinch of sugar. Heat ghee, add cumin seeds, green chilli and cubed boiled potato, then the sabudana, and stir over a low heat until the pearls turn translucent. Finish with lemon juice and coriander. The same soaked pearls make sabudana vada and, simmered in milk, a quick kheer.
