Jay Brand Jaggery Crushed is Indian cane jaggery already broken down into a coarse, sandy powder, so there is no block to chip at before you cook. It has the deep caramel flavour of traditional gur and dissolves quickly into milk, dal and syrups. This 400g pack comes from India and is imported by Jay Brand in Horley.
How to use it
Stir it straight into rice cooked in milk for sweet pongal, or melt it with a splash of water to make the syrup for coconut ladoos, til chikki and Diwali payasam. A teaspoon in sambar, rasam or a Gujarati dal balances the sour and spicy notes, as the pack itself suggests. Because it is already crushed, it also works as a sprinkle over porridge, roti with ghee or a bowl of curd.
