TRS Black Pepper Coarse is black pepper ground to a crunchy, cracked texture. TRS describe it as a more coarsely ground version of their black pepper powder, for use where a hot and crunchy texture is needed, such as meat rubs and marinades. It is packed in India and comes in a 100g bag, a good size for the spice drawer.
How to use it
Rub it generously over paneer, chicken or lamb with salt, lemon and garlic before grilling or roasting. In South Indian cooking it gives rasam and pepper chicken their warmth, and it is the backbone of a simple jeera aloo or sabudana khichdi on a Navratri fasting day, where whole spices take the place of onion and garlic. Sprinkle a pinch over raita, fruit chaat or roasted makhana for a quick festive snack. Add it towards the end of cooking to keep the heat bright.
