Fudco Jumbo Pink Peanuts are large, raw shelled peanuts with their thin pink skins left on, grown in China and packed in the UK in a 1kg bag. The bigger kernels roast evenly and give a good crunch, so this is the pack to buy when peanuts go into sweets, chutneys and festive snacks in quantity.
How to use it
Dry roast the peanuts in a heavy pan over a low flame for eight to ten minutes, stirring often, until the skins crack and the kernels smell nutty. Cool, rub between your palms to loosen the skins, then use them whole in sabudana khichdi, crush them coarsely for vrat aloo or grind them with green chilli and rock salt for a fasting chutney. For Diwali, stir roasted peanuts into melted jaggery and press thin to set as chikki.
