Double Horse Palada Payasam Mix brings Kerala's favourite festive dessert to your kitchen. Palada is a creamy payasam made by slowly cooking thin flakes of ada in sweetened milk until they turn soft and silky. This mix from Manjilas, the Kerala company behind Double Horse, combines the ada with sugar, cardamom and vanilla, so all you add is milk and a little ghee or butter. Made in India.
How to use it
Bring 1.5 litres of milk to the boil in a heavy pan, tip in the whole pack and stir well. Lower the heat to low-medium and keep cooking for around 30 minutes, stirring often so it does not catch, until it reaches the thickness you like. Stir in a spoon of ghee or butter, then finish with cashew nuts fried golden in ghee. Serve hot, or chill it for a cool dessert after a Navratri meal or Diwali lunch.
