Double Horse palada payasam mix brings the pink tinged, milky rice ada pudding of a Kerala sadya to an ordinary weeknight. Thin rice flakes, slow cooked in milk and sugar until creamy.
Double Horse is a Kerala food brand known for rice products, spice powders and ready mixes for Malayali cooking. Its palada mix packs the rice ada for the classic Onam dessert, so the slow part of the recipe is all that is left to do.

Cook the ada first as the pack directs, then simmer it slowly in full fat milk with sugar, stirring often, until the milk reduces and takes on a pale pink colour and the pudding turns thick and creamy. Finish with cardamom and, if you like, cashews and raisins fried in ghee. Palada payasam is the sweet that closes an Onam or Vishu sadya, served warm on the banana leaf or in small bowls, and it is just as good chilled the next day. Patience is the main ingredient: the slower the simmer, the deeper the colour.
