How to use it
Decant a small jar for the hob and keep the rest sealed in an airtight tin. Temper a teaspoon in ghee with cumin for pepper rasam or milagu kuzhambu, or toss it through sabudana khichdi and roasted makhana for Navratri fasting meals. It is good on fried eggs, in chicken and lamb marinades, over chaat and in buttered vegetables. For festive batches of mathri and namak pare, rub it into the flour with the ghee.
