Diamond Foods Black Pepper Crushed is whole Indian black pepper cracked into coarse pieces. The larger grind gives bursts of heat and a fresh, woody aroma that fine powder loses quickly, and it saves reaching for the pestle and mortar every time a recipe calls for cracked pepper. This 100g pack is a single-ingredient spice imported by Diamond Foods of Wembley.
How to use it
Sprinkle a pinch over boiled potatoes or sweet potato for a Navratri fasting snack, with sendha namak and a squeeze of lemon, or stir it into a cucumber raita. Crushed pepper is the backbone of South Indian rasam and pepper chicken, and it makes a quick dry rub for paneer tikka and grilled fish. Add it towards the end of cooking when you want the aroma to stay bright, or at the start in hot ghee for a deeper, rounder heat.
