Top-Op Haldi Whole is dried whole turmeric root, the knobbly golden-orange rhizome that is ground to make haldi powder. Buying it whole keeps its earthy, slightly bitter aroma fresh until the moment you grind it, and the pieces store for months in a sealed jar. This 50g pack is a produce of India, packed for Top Op Foods of Stanmore, a UK spice brand established in 1974.
How to use it
Break the roots into small pieces and grind them to a fine powder in a spice grinder, then sieve and store in an airtight jar for dals, sabzis and curries. Whole pieces can be simmered in milk with black pepper and a little palm candy or jaggery for haldi doodh, or added to pickling brines and stocks. Turmeric root is also used in puja: a piece is often tied with a thread or placed on the thali for Navratri, weddings and Pongal. Keep the pack dry and sealed.
