Suriya Black Jaggery Cube is karuppu sakkarai katti, a dark cane jaggery set into round cakes, made in Sri Lanka from sugar cane alone. Boiled longer than golden jaggery, it has a deep brown colour and a rich, slightly smoky, molasses-like sweetness that gives traditional sweets their colour and depth. The 350g screw-top jar is imported by Suriya Food in Harrow.
How to use it
Grate or break a round and melt it with a splash of water, then strain the syrup to remove any cane fibres before cooking. Use it for sakkarai pongal, paal payasam, kozhukattai filling, adhirasam and coconut barfi, or for Sri Lankan aluwa and kavum during festival cooking. A small piece in hot ginger tea or in tamarind-based dishes such as puli kuzhambu balances the sourness. After a meal many people simply enjoy a little piece on its own. Keep the lid tightly closed so the jaggery stays dry.
