      Samayal Jaggery Balls are traditional rounds of cane jaggery, the unrefined sugar made by boiling sugar cane juice until it thickens and sets. Shaped by hand into balls, this is the gur familiar from Indian village markets, with a rich, smoky caramel flavour and a soft, crumbly texture. A bag of balls keeps well and lets you break off just what each recipe needs.

      How to use it

      Break a ball with a rolling pin or grate it, then melt the pieces with a little water and strain the syrup before cooking. Use it for til gur ladoo, peanut chikki, gur ke chawal and sweet pongal, or stir it into roasted wheat flour and ghee for kada prasad. For Navratri fasting sweets, cook it with makhana, peanuts or rajgira into chikki and ladoo. A piece in hot milk with dry ginger is a winter favourite, and a nugget of gur with a meal is the traditional way to finish a festive thali.
