Samayal Jaggery Powder is dark cane jaggery from India in loose, granular form, sold in Tamil homes as nattu sakkarai. It carries the full molasses and caramel taste of gur but measures and dissolves like brown sugar, which makes it the easy way to cook with jaggery every day. This 350g pack is packed in the UK by Haran Foods.
How to use it
Spoon it straight into hot dishes: a tablespoon in sambar or Gujarati dal rounds off the tamarind, and a teaspoon sweetens masala chai or coffee. For sweet pongal or chakkarai pongal, stir it into cooked rice and moong dal with ghee, cardamom and fried cashews. It mixes with grated coconut for modak and kozhukattai fillings, with roasted peanuts for quick ladoo on Navratri fasting days, and with warm milk once the pan is off the heat. In baking, swap it for brown sugar in flapjacks and gingerbread.
