Samayal Jaggery is cane jaggery from India, known as gur in Hindi, vellam or sakkarai in Tamil and bella in Kannada. It is made by boiling down sugar cane juice until it sets, so it keeps the deep caramel and molasses flavour that refined sugar loses. This 350g pack holds broken pieces that are easy to grate, crush or melt.
How to use it
Grate or crush the pieces and melt them in a splash of water, then strain the syrup to remove any cane fibre before cooking. Stir the syrup into roasted peanuts or sesame for chikki, into rice and milk for sweet pongal and gur ki kheer, or into wheat flour and ghee for atte ka halwa and churma ladoo. A small piece sweetens masala chai and balances the sourness of sambar, rasam and Gujarati dal. Jaggery sweets are popular on Navratri fasting days, and gur is shared as prasad during Dussehra and Diwali.
