      Samayal Barnyard Millet is the small, pale grain known as kuthiraivali in Tamil, sanwa or samvat in Hindi and udhalu or oodhalu in Telugu and Kannada. It cooks quickly into soft, separate grains with a mild, slightly nutty taste, and in North India it is one of the main foods eaten on fasting days. The 500g pack is a product of India, packed in the UK by Haran Foods.

      How to use it

      Rinse the millet two or three times, then cook one cup with two to two and a half cups of water for about twelve minutes, until the water is absorbed and the grains are fluffy. For a Navratri vrat khichdi, temper cumin, green chilli and diced potato in ghee, add the rinsed millet with rock salt and water and simmer until soft, then finish with roasted peanuts and coriander. In the south it is cooked like rice for sambar meals or simmered with milk and jaggery into a sweet pongal.
