Periyar Instant Semiya Payasam Mix is a ready blend for Kerala's favourite festive pudding, made by Parayil Exports in Kottayam. The box holds roasted semiya (vermicelli) already measured with sugar, cashew nuts, raisins, cardamom and a touch of vanilla, so the only thing you add is milk. It is the payasam served at Onam sadya, at temple festivals and on Diwali morning across South India.
How to use it
Bring one litre of milk to the boil in a heavy pan. Tip in the entire pack, lower the heat and simmer for about fifteen minutes, stirring often so the vermicelli does not catch on the base. The payasam thickens as it cools, so take it off the heat while it still pours. Serve warm in small cups, or chill it for a creamier set. A spoonful of ghee-fried cashews on top makes it ready for a Navratri or Diwali table.
