Opus Coconut Dry Whole is a pack of whole dried coconut kernels, known in Indian kitchens as copra, khopra or sukha nariyal. The thin brown skin is left on and the white flesh inside is firm, rich and gently sweet, ready to grate, slice or shave as you need it. The pack is a product of India and is imported into the UK by a wholesaler in Coventry.
How to use it
Grate the kernel on the fine side of a box grater for coconut ladoo, barfi and the dry coconut chutneys of Maharashtra and Karnataka. For a curry base, toast thin slices in a dry pan until golden, then grind with fried onion and whole spices into a dark, nutty masala. Shaved copra is added to panchamrit and to the dry fruit mix handed out as prasad, and a whole kernel is a familiar sight on the puja thali at Navratri and Diwali.
