Natco Medium Desiccated Coconut is dried, shredded coconut with a medium cut, packed by Natco Foods in Buckingham. It has a clean, sweet coconut flavour and a texture that holds its shape in sweets yet softens nicely in sauces. Natco suggest it for curries, cakes, biscuits and ice creams. The 300g bag is a handy size for occasional baking and small batches of festive sweets.
How to use it
For quick coconut ladoo, warm the coconut in a spoon of ghee, stir in condensed milk and a pinch of cardamom, cook until it comes together, then roll into balls and coat in more coconut. Toast it dry until golden to top kheer, shrikhand or gajar halwa. For a South Indian curry or chutney, soak a few spoonfuls in warm water before grinding. It also adds bite to granola, flapjacks and coconut buns.
