Natco Medium Desiccated Coconut is dried, finely shredded coconut with a medium cut that sits between fine and flaked. It keeps the sweet, nutty flavour of fresh coconut in a dry form that stores well, and Natco recommend it for curries, cakes, biscuits and ice creams. The 1kg bag is the size to buy for festival baking and sweet-making.
How to use it
For Diwali coconut barfi or ladoo, cook the coconut in ghee for a minute, add condensed milk or sugar syrup with cardamom, stir until it gathers into a mass and set or roll. Toast a handful in a dry pan until golden to scatter over kheer, halwa and modak filling. In savoury cooking, soak it in a little warm water and grind it into a coconut paste for South Indian curries and chutneys, or add it to a vrat-friendly sabudana khichdi. It also bakes well into macaroons and coconut cake.
