Fudco Whole Jeera is whole cumin seed, the warm, earthy spice that starts more Indian dishes than any other. A spoonful sizzled in hot oil or ghee gives the nutty base note to dal, sabzi, rice and raita. The 100g bag is a sensible size for a small household or for topping up the masala dabba.
How to use it
Heat a tablespoon of ghee, add a teaspoon of jeera and wait for the seeds to crackle and darken a shade before adding onion, ginger or the dal itself. For jeera rice, fry the seeds in ghee, add rinsed basmati and water and cook covered. Dry roast and grind cumin for raita, chaas and chaat. Cumin is one of the spices many families keep for Navratri fasting, so it goes into sabudana khichdi, vrat aloo and samak rice.
