Fudco Pistachio Kernels are shelled, unsalted pistachios from Iran, with the purple and green skins that give Indian sweets their colour. Because the shells are already off, they are ready to chop, slice or grind straight from the 200g bag, which makes them the easy choice for festive cooking.
How to use it
For Navratri and Diwali sweets, soak the kernels in hot water for ten minutes, slip off the skins for bright green slivers and scatter over kheer, shrikhand, barfi or rabri. Grind them with a little sugar and cardamom to fill pistachio rolls, or fold chopped kernels into kulfi before freezing. Lightly toasted, they finish a pulao or a bowl of sabudana kheer with a gentle crunch.
