Fudco Desiccated Coconut Medium is dried grated coconut with a medium cut, between fine and long thread. It keeps a little bite in finished dishes, which is why many cooks prefer it for coconut barfi, chikki and South Indian dishes. The 250g bag is a handy size for the festive baking and sweet making that runs from Navratri to Diwali.
How to use it
For coconut barfi, cook 200g of the coconut with 150g of sugar and 150ml of milk in a heavy pan, stirring, until the mixture thickens and comes away from the sides, then stir in cardamom and a spoon of ghee, spread in a greased tray and cut into squares once set. Soaked in warm water for ten minutes, it stands in for fresh coconut in poriyal, thoran and coconut chutney, and it gives texture to cakes and flapjacks.
