Fudco Char Magaz are peeled watermelon seeds, the small cream-coloured kernels sold in Indian and Pakistani grocers as magaz or magaj. The name means four seeds, from the traditional mix of melon, watermelon, pumpkin and cucumber kernels, and watermelon seed is the one most often sold on its own. They bring a mild, nutty crunch to festive sweets. The pack states they must be cooked before eating.
How to use it
Dry roast the seeds in a heavy pan over a low heat, stirring, until they puff slightly and turn pale gold, then cool. Once roasted, stir them into besan or atta ladoo, panjiri and gond ladoo, scatter them over barfi and halwa, or grind them with almonds, fennel and peppercorns for a thandai mix around Dussehra and Diwali. They also thicken and enrich korma and shahi gravies when ground to a paste with cashews.
