Fudco Cashew Nuts are whole cashew kernels from Benin, packed in the UK in a 700g bag. Fudco selects them for a creamy taste, and the larger bag makes sense in the weeks around Navratri, Dussehra and Diwali, when cashews go into sweets, rich gravies, dry fruit trays for visitors and fasting snacks all at once.
How to use it
For kaju katli, grind the cashews to a fine powder in short pulses so they do not turn oily, cook with a one-string sugar syrup over a low heat until the mixture forms a soft dough, then knead with a little ghee, roll thin and cut into diamonds. For shahi paneer or korma, soak a handful in hot water for twenty minutes and blend smooth. On fasting days, roast cashews in ghee with rock salt and black pepper for a quick vrat snack.
