Fudco Jumbo Cashew Nuts are extra large whole cashews from the Ivory Coast, packed in a protective atmosphere in a 700g bag. The big, pale kernels look generous on a dry fruit tray and keep their shape when roasted or fried. The larger bag is made for the festive season, when cashews go into sweets, rice dishes, snacks and gift boxes all at once.
How to use it
Fill Diwali gift boxes and dry fruit trays with whole cashews, dates and raisins. For a vrat snack on Navratri fasting days, roast the cashews in a little ghee over a low heat until golden and season with rock salt and black pepper. Fry them whole to finish biryani, pulao, kheer and sheera, or grind them for kaju katli and blend them, soaked, into rich korma and shahi paneer gravies.
